Unfortunately, those fall and winter classics can be loaded with carbs and sugar. A keto nightmare! 

So, if you’re looking for ways to enjoy these delicious, warm, seasonal treats without ruining your ketogenic lifestyle…look no further! 

Keto Hot Chocolate 

1 cup unsweetened almond milk 
2 tablespoons heavy whipping cream
2 tablespoons Swerve confectioners’ style sweetener
1 tablespoon unsweetened cocoa powder

Combine all ingredients in a small saucepan over medium heat. Whisk well for 2-3 minutes or until all ingredients are well incorporated and desired temperature is reached. 

**Serves 1 (142 calories, 3 g net carbs)

Keto Hot (Dark) Chocolate

6 oz dark chocolate, chopped or shaved (100% cacao unsweetened baking chocolate was used in this recipe)
½ cup unsweetened almond milk
½ cup heavy cream
1 tablespoon Besti Allulose (or your preferred keto-friendly sweetener)
½ teaspoon pure vanilla extract

In a small saucepan, heat almond milk, heavy cream, and sweetener over medium heat only it begins to gently simmer. Remove from heat and stir in vanilla and dark chocolate, whisking constantly until chocolate is completely melted. 

**Makes 4 servings (193 calories, 4 g carbs, 1 g net carbs)

And, if you simply can’t live without marshmallows sitting atop your keto hot chocolate, here’s a keto marshmallow recipe to go along with your hot, creamy, cup of keto, chocolatey goodness! 

Keto Marshmallows 
(Recipe from The Keto Diet, by Leanna Vogel)
1 cup water, divided
3 tablespoons unflavored gelatin
1 cup confectioner’s style erythritol
2 teaspoons pure vanilla extract
¼ teaspoons finely ground sea salt

Prepare an 8 inch square pan by lining with parchment paper (drape ends over side for easy lifting. Place ½ cup water in a mixing bowl and sprinkle gelatin on top. Do not stir. Let sit as you prepare other ingredients. In a small saucepan, combine ½ cup water and remaining ingredients, turn heat to medium and stir occasionally until mixture begins to boil rapidly and almost spills over. Remove from heat. Reduce heat to low and keep at a low boil for 5 minutes.

Transfer hot liquid to the mixing bowl with gelatin. Using a whisk attachment on your mixer, whisk at high speed for 6-7 minutes, until the mixture thickens to a spreadable consistency (similar to marshmallow creme). Do not overbeat or the mixture will be too stiff to spread. 

Once thickened, transfer mixture to the prepared pan. Smooth the fluffy marshmallow mixture with the back of a spatula. Allow marshmallows to sit at room temperature for 1-2 hours, until firm, then cut into 1 inch squares. 

Keto Pumpkin Spice Hot Chocolate

1 cup unsweetened almond milk 
1 cup coconut cream 
2 tablespoons pumpkin puree
1 tablespoon unsweetened cocoa powder
1 scoop chocolate MCT oil powder
¼ teaspoon pumpkin pie spice
¼ teaspoon cinnamon

Combine coconut cream and unsweetened almond milk in a small saucepan over medium heat, and bring to desired temperature. Once heated add mixture to a blender along with remaining ingredients and blend until well combined. 

**Serves 2 (307 calories, 31g fat, 2.5 g carbs)

Keto Spiced Pumpkin Hot Chocolate

1 cup unsweetened cashew milk
1 tablespoon unsweetened cocoa powder
1 tablespoon pumpkin puree
⅛ teaspoon liquid stevia (adjust to taste, or use keto friendly sweetener of your choice)
1 small pinch each of cinnamon, nutmeg, and ginger

Add all ingredients to a small saucepan and whisk until fully dissolved. Heat over medium heat until desired temperature is reached. Serve immediately.

*Serves 1 (40 calories, 5.2 carbs)

Keto Pumpkin Spice Latte

1 tablespoon pumpkin puree
¼ teaspoon pumpkin pie spice
½-1 tablespoon allulose (to taste, can also substitute with keto friendly sweetener of your choice)
½ tablespoon pure vanilla extract
½ cup unsweetened almond milk
½ tablespoon full fat coconut milk
1 shot espresso (if you prefer a less strong version, simply opt for ½ cup of your preferred coffee, freshly brewed)

Slightly warm pumpkin puree and pumpkin pie spice in a small saucepan (this small amount won’t take much). Stir in sweetener until combined. Add unsweetened almond milk and full fat coconut milk, stir to combine, and simmer until warm. Add vanilla and whisk until frothy. 

Pour espresso or freshly brewed regular coffee into a mug and add the pumpkin spiced milk. 

Optional garnish: homemade whipped cream (or your preferred keto friendly brand) and a pinch of pumpkin pie spice. 

**Serves 1 (70 calories, 2 g carbs) (nutritional value does not include optional whipped cream garnish)
